SUPER BOWL Is right around the corner

I can imagine we are all excited for the big game on Sunday, whether we are a Bronco's fan, or a Panthers fan, right!? I'm not for either team, BUT being that Zack and I are living (I fly out tomorrow morning) in North Carolina, I feel a slight urge to cheer on the Panthers! Either way, I'm so excited I get to board a plane tomorrow morning to travel to my new adventure with my husband and our pup, Myla! These last few days have been a slight challenge to remain sane. Not because my family is driving me crazy, or because I can't get to the gym -even though that is a big factor in it all- but it's honestly because I have been out of my normal for a while now, and starting to feel the difference. Now, don't get me wrong, I wouldn't trade being here for my brother for ANYTHING, but it is just time for this girl to start her adventure with her family.

SUPER BOWL! Ahh yeah, I'm so excited for the feeling of being in a state that is IN the super bowl (no offense Vikes, you were close). The energy, the competitiveness, the fans, the crazy, and....the food and drinks! I know a lot of you are working towards your goal of overall health and wellness, and this day is probably something you may be intimidated of. With all the yummy temptations surrounding your super bowl parties, you may not know what to eat or drink, or at least how much is okay. Well, do I have a treat for you! Trust me, I'll have a few naughty choices, but I also believe it's okay to do that here and there, as long as you know it won't create bad habits going forward. You know yourself, so eat and drink things you know YOU are in control of, not the food controlling you.  

Cauliflower Buffalo "Wings"

Yield: 2 to 4 servings
Active Time: 8 minutes
Total Time: 1 hour


2 tablespoons melted ghee
2/3 cup hot sauce
1/2 cup coconut flour
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon salt
1/4 cup melted coconut oil
1 medium head cauliflower, broken into florets


Preheat oven to 450 degrees and line a baking sheet with parchment paper. Whisk together melted ghee and hot sauce in a small bowl. Set aside. In a small bowl, mix together coconut flour, garlic powder, onion powder, and salt. Pour melted coconut oil into another bowl. Dip cauliflower florets into oil, then toss to coat in flour mixture and place on baking sheet. Roast in oven 20 minutes, turning over after 10 minutes. Remove from oven and brush hot sauce mixture over each piece. Return to oven and roast 25 minutes more.
