Alright, I'll be the first to admit, when I was told that the first week in North Carolina would be hard, I didn't really believe it. Mostly because I thought I was good at change, and trying new things. Boy was I wrong, it has been hard...until yesterday. Zack and myself were invited to a super bowl party from his co-worker, and I was extremely excited to be around other people. I thrive off of other peoples energy, and positivism, so the party was exactly what I needed! These first few days, I haven't be able to get around to meet new people, so I have been in our apartment neighborhood only, and going a tad crazy. You know, questioning my business and it's success, feeling like I'm not doing enough every day towards my business, and wondering if what I've created is good enough for everyone. You know, normal stuff (laughing at myself now). It is so scary to question yourself and your abilities, especially when I believe I am a very confident and successful woman. But it just goes to show you, that during a few life changing events (Travis' accident and moving across the country), emotions come out of no where, and without warning.  I understand that it is okay to feel different emotions, as long as I deal with them in a healthy way. And that is exactly what I did at the super bowl party. So grateful for new friends, and new adventures with Zack!

It was a blast last night, lots of new people I got to meet, great food, and ideas for my business, overall it was a success! I even went on a hike with Myla, my newest pal, and her pooch today. Felt amazing to be involved with nature, the brisk fresh air, and get a little sweaty. Myla even found a river to swim and roll around in....bath time already done. Successful day for happiness, just what I needed. It's so important everyday to take a moment to enjoy God's creation, and fully believe that every morning we lift our heads off of our pillow, we have everything that we need.

I did make my cauliflower buffalo bites, (posted the recipe few posts ago) for the super bowl party! They were a HIT, everyone who ate them, loved them! Even Zack :) I'll share the recipe again for you all, just because I love you, and love this recipe!

Cauliflower Buffalo "Wings"

Yield: 2 to 4 servings
Active Time: 8 minutes
Total Time: 1 hour


2 tablespoons melted ghee
2/3 cup hot sauce
1/2 cup coconut flour
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon salt
1/4 cup melted coconut oil
1 medium head cauliflower, broken into florets


Preheat oven to 450 degrees and line a baking sheet with parchment paper. Whisk together melted ghee and hot sauce in a small bowl. Set aside.

In a small bowl, mix together coconut flour, garlic powder, onion powder, and salt.

Pour melted coconut oil into another bowl. Dip cauliflower florets into oil, then toss to coat in flour mixture and place on baking sheet. Roast in oven 20 minutes, turning over after 10 minutes.

Remove from oven and brush hot sauce mixture over each piece. Return to oven and roast 25 minutes more.
