Banana Bread Waffles & Fruit

Alisha Meyer

How many of you reading this, love waffles or breakfast!? I know I have always been a breakfast person, but I also know that I love having quality foods to start out the day. I'm so excited to share with you one of my favorite recipes that go along with my Paleo lifestyle!

Banana Bread Waffles with Mixed Fruit Topping

  • 4 large bananas, mashed
  • 4 large eggs
  • 1/2 c almond butter
  • 1/4 c melted coconut oil
  • 1/2 c coconut flour
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • pinch of fine grain sea salt

For the toppings:

  • 1 c blueberries
  • 1 1/2 c raspberries
  • 2 tsp coconut oil
  • 2 tbsp coconut oil
  • 2 tbsp organic honey
  • 2 tbsp coconut oil
  • 1 banana sliced
  • 1 tsp ground cinnamon

  1.  Preheat the waffle iron
  2. Combine the bananas, eggs, almond butter, and coconut oil in a blender, food processor, or mixing bowl and mix well until smooth. Then the coconut flour, cinnamon, baking soda and powder, vanilla, and salt and mix until the batter is smooth.
  3. Lightly brush the waffle iron with melted coconut oil. Cook the waffles
  4. Make the toppings. Place the blueberries and raspberries in a blender and blend until the berries break down completely and the mixture is smooth. Place the pureed berries and honey in a small saucepan. Mix together and cook over medium heat until the berry mixture begins to bubble, stir, then turn the heat down to low and let it thicken for about 10 minutes.
  5. Heat the coconut oil in the a small saucepan over medium heat. Once the oil is hot, add banana slices and sprinkle with cinnamon. Cook on both sides for less than a minute, just until bananas caramelize.
  6. Serve the waffles with mixed berry and banana toppings, and garnish with extra berries.
